Quarantine rock cakes
- 33⅓ g Self raising flour
- 16⅔ g Butter
Put the self raising flour into a mixing bowl and add the butter. Rub the butter into the flour. Mix to a breadcrumb texture.
- 12½ g sugar
- ⅓ Large eggs
Now add the sugar to the mix and mix together. Then add the eggs and mix together some more.
Add the sultanas or raisins. Mix this all together some more until the mixture is dough-like and use your hands.
Grease a muffin tin with a non stick cooking tray or with butter. Place pieces of of dough in the muffin tray. Make sure to ore hear the oven 180°C/350°F gas mark 4. bake for 15-25 minutes.
Allow to cool and then enjoy.
