Pre-heat the oven to 160 degrees (325 fahrenheit).
In a medium size bowl mash the banana using a fork.
- 1 egg
- 1 tsp vanilla extract (optional)
- 3 tbsp vegetable oil
Then, stir in the egg, vanilla extract and oil.
- ½ all-purpose flour
- 1 tbsp all-purpose flour
- 1 tbsp baking soda
- 3 tbsp brown sugar
- 1 pinch salt
Add the sugar to the wet mixture and stir. Then add all other ingredients (use a cup as measurement for sugar and flour). Combine all ingredients gently with a rubber spatula (or similar) until reaching a nice consistency. Don‘t stir too much.
Add the muffin papers in a tray. Poor the mixture on top of the muffin papers (about 3/4). If you want, add a few chocolate chips on top.
Bake the muffins for approximately 20min. Enjoy with a cup of coffee or tea!
