"These muffins are delicious as a snack, breakfast or dessert and can be adapted very easily with different add-ins like chocolate chips, berries(cover in potato starch before mixing in) and nuts. Another option ist swap the maple sirup with unsweetened applesauce (note that the muffins won’t be as sweet as with the sirup)"

oat flour

    • tsp vinegar
    • tbsp oat milk
    • tsp vanilla
    • 20 ml maple syrup
    • 56 g overripe bananas
    • 10 ml nut butter
    • Large bowl

    In a large bowl mash bananas and mix with the milk, vinegar, nut butter, maple syrup and vanilla.

    • tsp salt
    • 20 g oat flour
    • ¼ tsp baking powder
    • Small bowl

    In a smaller bowl mix the oat flour with the baking soda, baking powder and salt.

  • Step 3/4

    Preheat oven to 180 degrees celsius on fan.

    Add the dry mixture to the wet and fold together. Divide into muffin liners and bake for about 20 minutes or until you can stick a toothpick in the middle of the muffin without to much sticking on.
