"This seitan or "vegan chicken" can also be prepared a day ahead. You can season it as you like, I like to use nutritional yeast flakes to add an extra little bit of flavor. Trust me, give it a shot! Use this "chicken" in delicious wraps and salads. Enjoy!"

Step 1/6
- 500 g flour
- 300 ml water

Add flour and water to a large bowl and knead well to combine. Cover and let the dough rest for approx. 1 hr.
Step 2/6
Rinse the dough thoroughly under cold water until the water in the bowl runs clear.
Step 3/6
- 1 tsp sweet paprika powder
- ½ tsp smoked paprika powder
- ½ tsp garlic powder
- 3 g thyme
- ½ tsp mustard
- salt
- pepper
Season the seitan with mustard, thyme, garlic powder, smoked paprika powder, sweet paprika powder, salt, and pepper. Knead everything to combine and let to marinate for approx. 45 min.

Pull the dough into a long rope and tie into a knot. This will give it a great texture in the end.
Step 5/6
- 300 ml vegetable broth
- 1 leaf bay leaf
- frying pan (with lid)
In a frying pan over medium heat, fry the seitan on both sides. Deglaze with stock and add bay leaf. Cover and let cook over low heat for approx. 40 min.
Step 6/6
Remove the seitan from the pan and shred it with two forks. In the meantime, reduce the stock to create a sauce. Serve with the sauce and enjoy!
