Peel the sweet potato and cut into small cubes. Wash the broccoli and then cut into small florets. Fry both sweet potato cubes and broccoli florets in a heated pan with oil.
Peel and chop the red onion and add it to the pan.
Deglaze pan with coconut milk and chopped tomatoes and bring to a boil, stirring constantly.
Cut scallions into rings. Remove the seeds from the chili pepper, cut it into small strips, and put in the pan with the scallions. Cook everything over medium heat, stirring several times until the sweet potatoes and broccoli are done.
Serve and garnish with cilantro and some lime juice as desired.
