    In a large pot, bring the water and 500 ml of red wine to a boil. Cut the onion into slices. Then finely dice the garlic and finely chop the thyme.

    In a large pot, bring the water and 500 ml of red wine to a boil. Cut the onion into slices. Then finely dice the garlic and finely chop the thyme.

    Sauté the onions in a pan with a little oil. After about 5 minutes add the garlic and after about 1 minute sprinkle everything with sugar. Now wait until the sugar has caramelized. Then immediately deglaze with the remaining red wine and add butter.

    Cook pasta in red wine water for 8 minutes. Slightly reduce the sauce over low heat. Coarsely chop hazelnuts. Then add the pasta directly to the sauce. If necessary, add a little pasta water until it reaches the desired consistency. Season the pasta with thyme, salt and pepper.
