    Finely chop onion and garlic. Peel and slice carrot. Cut chili into fine rings. Cut the scallions in half, finely chop the green part, and chop the white part a little coarser.

    In a wok, heat oil on high heat. Add garlic, onion, carrot, peas, chili, and the white part of the scallion. Sauté for approx. 2–3 min.

Then mix everything together and continue frying, until the rice becomes crispy. Next, add sweet soy sauce and soy sauce, continue frying the rice for approx. 5 min., until the sauce caramelizes.
