"This recipe is inspired by the Cantonese dish Gu Lao Rou, better known here as sweet and sour pork. But instead of serving it with rice, this version takes the classic combination of sweet pineapple, crunchy bell peppers, onions, and pork neck and prepares them as delicious grilled skewers, cooking them up until they are nice and juicy. When preparing the skewers on the grill, it's important to press them down a little so they can touch the hot grill surface and cook more evenly. If you're preparing them in a grill pan, I recommend brushing the skewers with a little oil beforehand."

    Cut pork neck into bite-sized pieces. Also cut 2/3 of the pineapple into bite-sized cubes, set 1/3 of the pineapple aside. Roughly cut one onion and one bell pepper into rectangles. On a skewer, alternate pork with one other ingredient at a time (pork, bell pepper, pork, pineapple, pork, onion, etc.). Do exactly the same for the other skewers until all ingredients are used up.

    • ½ red bell pepper
    • 2 knives

    Finely dice the other onion together with the other bell pepper, garlic, and ginger. Cut the rest of the pineapple into small cubes as well, then sauté in a small pot with oil together with the vegetables. After about 2 minutes, add tomato paste and sugar. Then deglaze everything with brandy vinegar, soy sauce and water. Season to taste with salt, pepper, and chilli. Now let the sauce simmer for about 15 min. until it thickens. Puree everything with a hand blender.
