Wash the lettuce, strawberries, and herbs. Spin the lettuce and herbs dry. Tear the lettuce into bite-sized pieces. Remove the stalk from the strawberries and halve.
Roast the sunflower seeds in a dry frying. For the dressing, mix balsamic vinegar, honey, mustard, and olive oil and season with salt and pepper.
