"On hot days, I prefer to eat cold dishes. And of course, noodle salad (or in this case, soba noodle salad) is always a good choice. Here I opted for a spicy peanut sauce paired with cucumber, red cabbage and snap peas. You can try using other raw veggies and adjust the spice levels to your taste. An extra squeeze of lemon or even chilli crisp also goes well with the dish. If you can't eat it all at once, you can store the noodles in the fridge for up to 3 days."

    Bring a pot of water to a boil over medium-high heat. In the meantime, slice the cucumber into thin strips. Thinly slice the scallions. Chop up the red cabbage. Slice the snow peas into bite-sized pieces. Cut the stems and leaves of the cilantro. Roughly chop the peanuts.

Mix again and thin out the sauce by adding cold water by the tablespoons until the desired consistency is reached. Add the noodles and all the vegetables and mix well. Garnish with peanuts, cilantro leaves and chilli oil if desired and serve. Enjoy!
