    Peel and finely dice the garlic and shallots. Quarter bok choy. Cook the soba noodles in boiling salted water until al dente, then drain and rinse with cold water.

    Heat coconut oil in a frying pan. Add the garlic and shallots and sauté. Then add the curry paste, turmeric and salt to sauté as well. Now add the edamame beans and bok choy and fry until the bok choy begins to fall apart. Add the coconut milk and simmer for approx. 5 min. Add the soba noodles and thoroughly mix everything together. Season with pepper and salt and serve immediately. Serve with lime, sesame seeds and chili oil.
