"Mapo tofu has become a famous dish in and outside of Sichuan. The main ingredients are tofu, ground beef (pork can also be used), chili, and Chinese peppers. This dish highlights the "spicy" characteristic of Sichuan cuisine. The tofu should be blanched in boiling water before cooking, so that there won't be too much soy milk, resulting in a tastier dish. A tip: Use high heat to thicken the sauce. And if you have any extra peppers, simply use a rolling pin to mash it a bit and store it in an airtight jar, or make pepper salt, pepper oil, or other seasonings—it'll come in handy for cooking in the future."

    Chop the garlic and mince the ginger. Slice scallions and set aside. Heat some oil in a frying pan, then add garlic and ginger and fry until fragrant. Add the ground beef and sauté until browned.

    Cut the tofu into small pieces.  Add it to the pot and cover with a lid. Cook for 2 min. Add starch and pepper powder to the pot. To serve, sprinkle with chopped chives and drizzle with chili oil.
