Juice lemons. Add to a pot along with the water and bring to a boil.
As soon as the water boils, add the sugar and stir till dissolved. Reduce heat to low and let simmer for 2 min.
Add lavender and remove pot from heat. Let the lavender syrup steep for 10-15 min. Pass the syrup through a sieve (leaving the lavender in will render it bitter) Let cool for at least 2 hrs.
- 4 ice cubes
- 1 lime
- mint (for garnish)
- 100 cup soda water
- 100 ml tonic water
For the lemonade, divide add lime quarters to a glass, pressing them slightly. Add a sprig of mint and ice cubes. Add approx 1cm (1/3 in) of syrup to the bottle of the glass and top up with half tonic water, half soda water. Adjust syrup to your own liking.
