"This sweet and spicy glazed chicken will make your mouth water! It is marinated with a dry rub (substitute with ¼ tbsp each of coriander seeds, crushed pink pepper, crushed black pepper and ½ tbsp of salt), then grilled and glazed with a sweet spicy umami glaze using your favorite summer berry jam – mixed berry, blackberry or red currant, the choice is yours. Perfect to impress your guests at your next BBQ night! For the chicken to be fully cooked, it has to reach an internal temperature of 80°C/176°F. If using a meat thermometer, measure on the thickest part. No worries, you can still check it even without one: Just use a skewer and poke it into the thickest piece. If the juice that is coming out is still pink, then the meat needs more grilling time. If, on the other hand, the meat juice is colorless and clear, it’s done. Serve with coleslaw, fresh bright and zesty salads, grilled corn and zucchini."

  • Step 2/3

When the chicken is marinated, heat up the grill or grill pan to medium heat. Oil the grilling surface and grill chicken pieces, turning them every so often until they are browned and almost done, depending on the size of the chicken pieces (or until the inside has reached 80°C/176°F). Meanwhile, grate garlic and finely chop chili. In a small bowl, mix garlic and chili with jam and soy sauce.

While still on the grill, brush chicken pieces with the glaze and continue to grill. Then turn, brush the other side with the glaze and grill, for approx. 4–5 min. more. Let rest for approx. 10–15 min., then cut and serve!
