Start by rolling out the bottom layer of pastry and carefully line the bottom of the pie dish and blind bake for 10 minutes at 200°c (392°f)
Whilst blind baking the bottom layer of pie sauté onion in a large frying pan
Once the onion is translucent in colour add mincemeat and brown
Then mix together the two packets of gravy mix in a small bowl with hot water and add to mincemeat and onion
Simmer away and add vegetables cut into small pieces and continue to simmer until the gravy has become thick
Transfer vegetables and mincemeat mixture onto pie crust and cover with another piece of pastry
Mix together in a small bowl the egg and milk and gently brush over top of pie
Place into oven and cook for approximately 1 hour and 10 minutes or until pastry is golden in colour
