"This carbonara is a summery interpretation of the classic, where charred corn replaces guanciale or bacon, lending the dish a sweet-smoky depth. Optionally, crispy fried bacon or pancetta can be added of course. Crucial for success is temperature control: the egg yolk and parmesan mixture must not be heated directly, but should instead be emulsified into a silky sauce using only the residual heat of the pasta and some pasta water."

    Cut corn kernels from cob using knife. Roast in hot large skillet with olive oil until golden brown. Add butter and toss corn until glossy and nutty. Season with salt. Set aside in skillet. Slice zucchini into thin strips using vegetable peeler, season lightly with salt, and set aside.

    Boil pappardelle in salted water according to package instructions until al dente. Drain pasta, reserving some cooking water. Grate parmesan. In small bowl, whisk together parmesan, egg yolks, some pasta water, and black pepper.
