3-ingredient black sesame brittle
"I was first introduced to the idea of sesame brittle through these little Greek candies I tried in Athens, and since then—I’ve been hooked. If you like the flavor of sesame, this brittle is for you. As shiny as a jewel and extremely tasty with ice cream, you can make it ahead and store it in an airtight container at room temperature for up to two weeks. Don’t be concerned as the sugar goes through its various processes before being caramelized, just keep stirring and let the magic happen."

- 66 g sugar
- ⅝ tbsp water
- saucepan

Combine sugar and water in a small saucepan over medium heat. Stir until completely mixed, and cook until mixture turns dark golden brown, approx. 15 – 20 min.
Step 2/3
- 7 g black sesame seeds
- 7 g sesame seeds
- salt
- silicone baking mat
- baking sheet
Stir in both sesame seeds and a pinch of salt. Spread mixture evenly onto a silicone mat-lined baking sheet. Let cool for approx. 15 – 30 min.
Step 3/3
- vanilla ice cream (for serving)

Once hardened, slice or smash sesame brittle and serve with vanilla ice cream. Enjoy!
