What better to complete a hearty meal of apple butter, bread, cheese and ale?
Peel, core, and cut the apples into small pieces. Add the apple pieces, sugar, and cider to a saucepan. Cook over medium heat for approx. 20 min., or until the apples have softened and the liquid is absorbed.
Purée the apple mixture with a hand blender. Once smooth, transfer back to the saucepan along with the cinnamon, cloves, and brown sugar. Cook for approx. 10 min. more over medium heat.
