Preheat oven to 180°C/350°F. Add peanut butter, sugar, egg, and a pinch of salt to a bowl and mix with a hand mixer with beaters until completely combined, approx. 2 min.
Scoop the dough into balls using an ice cream scoop and your hands and add to a parchment lined baking sheet. Press gently with the tines of a fork at two 90-degree angles, then bake the cookies at 180°C/350°F for approx. 10 min. Let cool for approx. 5 min., then transfer to a wire rack to cool completely.
