3-ingredient no-bake lemon pudding
- fine grater
- 2 bowls (small)
- fine sieve
- liquid measuring cup
- 2 bowls

Zest and juice lemon into two separate bowls.
Add heavy cream and sugar to a saucepan with lemon zest. Season with a pinch of salt and bring to a simmer over medium-high heat, whisking often. Once sugar has dissolved and mixture thickens slightly, approx. 5 min., remove from heat.
Add reserved lemon juice and mix to combine. Let cool until a skin forms on top of the mixture.
Set a fine sieve over a liquid measuring cup and strain the mixture. Transfer to serving dishes and refrigerate uncovered for at least 3 hrs. Serve with fresh raspberries or another fruit of your choice. Enjoy!
