This super easy lemon pudding has all the notes of what might happen if a lemon curd met up with a creamy custard. It sets thick like a panna cotta and somehow offers that same air of refinement. Enjoy with fresh berries of your choice."

Once sugar has dissolved and mixture thickens slightly, approx. 5 min., remove from heat. Add reserved lemon juice and mix to combine. Let cool until a skin forms on top of the mixture.
