Preheat the oven to 180°C/350°F. Pour walnuts into a food processor and grind into a fine walnut flour. Remove and set aside.
Separate eggs into two bowls. Add three-quarters of sugar to the bowl with the egg yolks and beat until pale yellow and a bit fluffy. Stir in ground walnuts with a rubber spatula and set aside.
Add the remaining sugar to the egg whites and beat until stiff. Fold into the walnut-egg yolk mixture and pour into a springform pan. Bake for approx. 35 min. at 180°C/350°F. Let cool slightly and serve with a sprinkling of confectioner’s sugar. Enjoy!
