"Broccoli and cheddar cheese is a classic combination and this quick snack (or light meal) makes use of those flavors in a slightly new way. Instead of using up the sought-after broccoli florets, this no-waste recipe relies on leftover stems you might have lying around, but you have flexibility of course to use a mixture of both the stems and florets here. The recipe could even work just as well with cauliflower or cauliflower stems. If you want to experiment with different types of cheeses, just pick something that melts well and has some additional flavor on its own. Serve with a fresh salad, top with an egg, or eat as is!"

    Slice the base off of your leftover broccoli stems, then peel the “trunk” to remove the tough outer layer. Roughly chop the broccoli stem into bite-size pieces. Peel and grate garlic. Zest and juice lemon.
