Clean the shrimp.
Then, dry the shrimp.
Slice the ginger and shallots.
Add white vinegar to water, using a ratio of 2:1, and mix thoroughly.
Fry the prawns in a pan until reddish oil is released.
Add ginger and shallots and stir fry until fragrant.
Add Shaoxing wine.
Season with salt.
Add white vinegar and water mixture.
Cover the pot and let simmer for 3 min.
After opening the lid, pour in the sesame oil.
The prawns are now ready to be plated.
