    Bring a large pot of salted water to a boil. Add the noodles and cook for 8 minutes. In the meantime, cut the bok choy lengthwise. Finely chop the cilantro and spring leeks and set aside. Finely grate the garlic clove and spread it in two noodle bowls. Then boil the bok choy for 2 minutes with the noodles. Drain and divide the noodles and greens between the two bowls.

    In a small pot, heat the oil until it slightly starts to smoke. Now pour the soy sauce, vinegar and chili flakes over the noodles. Next, add the cilantro and spring leeks on top. Finally, gently pour the hot oil over the herbs and serve.
    • 4 tbsp soy sauce
    • 2 tbsp rice vinegar
    • ½ tsp chili flakes
    • 6 tbsp oil
    • 1 pot (small)
