"This quick after-work recipe is somewhere between pizza and tarte flambée: instead of a classic pizza base, ready-made tortilla wraps are placed on the tray and spread with a creamy parmesan and sour cream mixture. Of course, you can experiment creatively with the topping - a basic recipe that allows for many variations. A tip: you can replace the grapes with diced plums, prunes or pieces of fig. You can also swap the radicchio for chicory, rocket, postelein or Asian lettuce."

  • Step 1/4

    • 2 tortillas
    • 125 g light crème fraîche
    • 62½ grated Parmesan cheese
    • salt
    • 1 parchment paper
    • 1 bowl

    Preheat the oven to 180 °C (fan oven). Place the tortillas on a baking tray lined with parchment paper, two tortillas may fit on one tray. For the topping, mix the crème fraîche with the grated parmesan in a bowl and season with salt. Spread the crème fraîche and parmesan cream evenly over the tortilla flatbread, leaving a small space at the edge.

    • 3 tbsp chopped walnuts

    Sprinkle the tortilla flatbreads with the chopped walnuts and bake in the preheated oven on the middle rack for 8-10 minutes until the cream is lightly golden brown. Please take care: Every oven bakes differently, the flatbreads should not get too dark. The pizzas that are baked on top usually turn brown more easily, so it is best to swap the trays after 5 minutes.

    • 75 seedless red grapes

    • ½ tbsp balsamic vinegar
    • 1 bowl

    While the bases are in the oven, wash the radicchio, remove any limp outer leaves and, at best, work with the heart in the middle. Pluck the crunchy lettuce into rough pieces. Wash and quarter the grapes. Season both in a bowl with salt and pepper and marinate lightly with olive oil and balsamic vinegar.

    • 4 tbsp Parmesan cheese (shaved)

    Remove the white pizzas from the oven and place on plates. Spread the marinated radicchio and grape mix over the pizzas, sprinkle with freshly grated parmesan and serve immediately.
