"Caesar salad is one of the most famous salad variations and os definitely one of my personal favorite salads. Here I have made a nice little vegetarian version using vegetarian Parmesan cheese and with the additional crunch of some mini cucumbers. If you can't find vegetarian Parmesan cheese, you can also leave it off of the salad or sprinkle some nutritional yeast and salt over the salad. Also make sure to use a vegetarian Worcestershire sauce; just check the label before purchasing!"

    Tear the baguette into bite-sized pieces and fry in a pan with approx. 3 tbsp. olive oil until golden brown. Then drain on a paper towel and season with salt.

    For the dressing, peel the garlic clove and finely grate the parmesan cheese. Then blend finely with the remaining ingredients in a measuring cup using an immersion blender. If the dressing is too thick, you can add a little water to dilute it. Season to taste with salt and pepper.

    • 3 tbsp mayonnaise
    • 3 tbsp full-fat Greek yogurt

    Wash the lettuce and cut into bite-sized pieces. Also cut the cucumbers into 1 cm slices. Arrange the lettuce on plates and spread the cucumbers on top. Then drizzle the dressing over it, shave some vegetarian Parmesan over it in thick strips using a peeler, and finally add the croutons. Enjoy!
