½ onion
red bell pepper
200 g cherry tomatoes
200 g spinach
120 g couscous
ground cumin
extra-virgin olive oil
saffron
salt
feta cheese (for serving)

    Season the salmon fillets and bake them in a pre-heated oven (180 degrees Celsius) for 20 minutes

    • red bell pepper
    • 200 g cherry tomatoes
    • ground cumin

    Chop the onion, red bell pepper and cherry tomatoes and sautée them in a heated pan.

    • 120 g couscous
    • saffron

    Boil water (same amount as couscous) and put the couscous in a bowl with salt and saffron. Pour the water on the bowl with the couscous and cover. Let cook for 5 minutes. After that time, stir with a fork so the couscous is fluffy

    Add the spinach in the pan with the vegetables. Remove the salmon from the oven and break the salmon down into pieces

  • Step 5/5

    In a serving bowl add the couscous, the sautéed vegetables and the chunks of salmon. Mix them together and top with feta crumbles
