Vegan carrot and orange spice cake
"This is the first ever recipe that I created! It turned out so great the first time I made it once again less than a week after! It is extremely moist and has some bitter notes from the orange zest that make this cake one of the best cakes i’ve ever had. Plus, it’s vegan! Step 1/8
- bundt pan
Spray (or oil) a bundt cake pan and preheat the oven at 350°F or 180°C
Step 2/8
- ¼ tbsp ground flaxseed
- ½ tbsp water
In a small bowl, mix ground flaxseed with water and let sit for about 10 minutes, or until it forms a gel

- ¼ banana
- ¼ tbsp vanilla extract
- ¼ orange juice from one orange
- ⅛ cup canola oil

Meanwhile, in a separate big bowl, mash a ripe banana, then add the oil, vanilla and orange juice and mix all together

- ⅛ cup sugar
- ⅛ cup coconut sugar
- ⅜ grated carrots
- ¼ orange zest from one orange
- ⅓ tbsp grated ginger
Once combined, fold in both sugars, orange zest and grated carrots and ginger

Add the “flax egg” to the mixture and whisk until fully combined

- ⅜ cups flour
Fold in flour, one cup at a time

- ¼ tbsp baking powder
- ¼ tbsp baking soda
- ⅓ tbsp ground cinnamon
Finally, incorporate cinnamon, baking powder and baking soda into the mixture

Put in the oven and let bake for about 30-40 minutes, or until you insert a toothpick and it comes out clean
