Vegan Banana Bread
- loaf pan
Preheat the oven at 350°F or 180°C and grease a loaf pan with oil
- ⅝ Ripe bananas
- ⅛ cup coconut sugar
- ⅛ cup organic white sugar
- ⅛ cup coconut oil (liquid)
- ⅓ tsp vanilla extract
In a big bowl, mash the bananas. Then add both sugars, oil and vanilla extract and mix all together
- ⅜ tsp ground cinnamon
- ¼ tsp ground nutmeg
- ¼ tsp baking soda
- ¼ tsp baking powder
Then, add cinnamon, nutmeg, baking powder and baking soda
- ⅜ cups all purpose flour
Once combined, sift in flour, one cup at a time, and gently fold it into the mixture
- Optional: your favorite stir ins
Optional step: Add in your favorite stir ins, such as vegan chocolate chips, peanut butter, walnuts, etc... You can also cut a banana halfway through and place it on top of the mixture (once it’s already in the pan) for decoration, just as I did
Pour batter into the loaf pan and bake for about 30 minutes, or until a toothpick is inserted and it comes out clean.
Once it’s cooked, let cool (totally optional) for about 20 minutes and enjoy!
