Cut your vegetables
Soté your carrots coating them with some brown sugar and chilli powder. Add the onion and garlic. Stir for 3 minutes until softened. In the meantime, cook the dry udon noodles in boiling water with salt for 10 min.
In a bowl mix the soy sauce, some of the garlic, rice vinegar, fish sauce, teriyaki sauce, Worchestershire sauce and fish sauce. Add the mix into the wok. Add water to create more sauce. Cook until it reduces and thickens.
Add the udon noodles and fresh green onion and stir. Cook for 5 more minutes. Serve. Enjoy!
