the yummiest, GF, DF, & vegan cookies

Step 1/ 7
Preheat oven to 350. Prepare cookie pan with parchment paper.
Step 2/ 7
- ⅜ cups oat flour
- ⅛ cup gluten-free rolled oat
- ⅛ cup chopped walnut
- ⅛ cup dark chocolate chips
- ⅛ tsp baking soda
- ⅛ tsp baking powder
- ⅛ tsp salt

In a medium bowl, mix together the dry ingredients.

- ⅛ cup melted coconut oil
- ⅛ cup organic apple sauce
- ⅛ cup cane sugar (or coconut sugar)
- ⅝ flax eggs (or eggs)
- ¼ tsp pure vanilla extract

In a large bowl, whisk together the wet ingredients. Whisk until the ingredients form a smooth texture.
Step 4/ 7
Add the dry ingredients to the wet ingredients. Whisk until combined.
Step 5/ 7
Let cookie dough rest for 5 minutes so the oat flour can absorb the wet ingredients.
Step 6/ 7
Scoop dough onto baking sheet. Try to form the best “disc” shape you can. As you can see in my image we had a problem with this, but it ended up not mattering in the end!
Step 7/ 7
Bake cookies for 9-11 minutes. After removing cookies from the oven, carefully remove the parchment paper and cookies from the baking sheet. Let cookies cool on the counter & enjoy!
