½ package
taco seasoning
8 oz
salsa
½ cup
sweet onion
½ cup
spinach
8 oz
canned corn
8 oz
canned black beans
1 tbsp
minced garlic
tortilla chips
shredded Mexican cheese blend
olive oil
optional: avocado and lettuce
  • Step 1/4

    • ½ lb ground beef
    • ½ package taco seasoning
    • 8 oz salsa

    Brown ground beef in olive oil over medium heat, then drain. Turn heat to low, pour in salsa and taco seasoning, and let simmer for a few minutes.

  • Step 2/4

    • ½ cup sweet onion
    • ½ cup spinach

    Chop up onion and spinach. Sauté in olive oil over medium heat for a few minutes.

  • Step 3/4

    • 8 oz canned corn
    • 8 oz canned black beans
    • 1 tbsp minced garlic

    In the same pan as the onion, add garlic, corn, and black beans and sauté for a few more minutes.

  • Step 4/4

    • shredded Mexican cheese blend
    • optional: avocado and lettuce
    • tortilla chips

    Layer in a bowl as follows: ground beef mixture (bottom), corn and bean mixture, and cheese. Top with avocado and lettuce if desired. Eat with chips or a fork!
