Skinny Banana Bread

2 ovens, 4 loaf pans, baking sheet, 4 bowls, 5 spatulas, sieve, microwave-safe bowl, microwave, wire rack, knife, cutting board
Step 1/11

Pre-heat oven to 170°c

Line a standard 9x5” loaf pan with baking paper.

- ⅔ bananas (overripe)
- ⅛ egg
- ⅛ tbsp vanilla extract
- 3 g stevia
- ⅛ tsp Ground cinnamon

Mash Bananas in a mixing bowl then add egg, vanilla extract, stevia and cinnamon powder and mix together.

- ⅛ tsp salt
- 33⅓ g flour

In a separate bowl sift flour, baking powder, baking soda and salt.

Gradually add the flour mix into the banana mixture, stirring gently to combine.

- 5 g unsalted butter (melted)

Cut butter into smaller pieces and microwave for 10 seconds then stir, repeat until butter is melted. Make sure it’s not too hot.

Slowly add the melted butter into the banana mixture and mix to combine.

Pour mixture into lined loaf pan and spread out evenly.

Bake in pre-heated oven for 40 minutes or until a skewer come out clean.

Allow bread to cool in loaf pan for 5 minutes then take out of loaf pan and place on wire rack to cool.

Cut into 12 slices (around 1.7cm each if a 9x5” pan is used)
