Ingredients

onion
3 cloves garlic
red bell pepper
2 tsp ground cumin
2 tsp sweet paprika powder
¼ tsp cayenne pepper
canned diced tomatoes
salt
black peppercorn
140 g feta cheese
eggs
cilantro
  • Step 1/6

    Heat oven to 190 C degrees

  • Step 2/6

    Heat olive oil in a skillet and add thinly chopped onion and red bell pepper an cook gently for approx. 20 minutes until soft. Add garlic and cook for 1-2 minutes.

  • Step 3/6

    Stir in cumin, paprika and cayenne and cook for 1 minute

  • Step 4/6

    Pour in tomatoes and season with salt and pepper, simmer until tomatoes have thickened, about 10 minutes. Teste and add salt and pepper if needed.

  • Step 5/6

    Gently crack eggs into skillet over tomatoes forming small holes into it. Transfer skillet to oven and bake until eggs are dine, 7-9 minutes.

  • Step 6/6

    Sprinkle with feta and cilantro, season eggs with salt and pepper.
