Sesame chicken with nuts and dried fruit

Step 1/ 3
- ½ kg chicken thigh (boneless)
- 5 g ginger
- 2 cloves garlic
- 1½ stalks scallions
- 10 g cilantro
- 30 g dried apricots
- cutting board

Cube chicken thighs. Peel and thinly slice ginger. Peel and mince garlic. Slice scallions diagonally into large pieces. Roughly chop cilantro and dried apricots.
Step 2/ 3
- 2 tbsp sesame oil
- 2 dried chilis
- 40 g cashews
- salt
- pepper
- wok
- rubber spatula
Set a wok over high heat and add half of the sesame oil. Add scallions and dried chili peppers. Then add ginger, garlic, chicken, cashews, and dried apricots. Add remaining sesame oil and season with salt and pepper. Continue frying over medium heat for approx. 4 min.
Step 3/ 3
- 1½ tbsp soy sauce
- 35 ml rice wine
- ½ tbsp sesame seed
- chili flakes (for garnish)
- rice (cooked, for serving)
Add soy sauce and rice wine, then let simmer for approx. 7 min., or until the sauce is thick and glossy. Garnish with sesame seeds, scallions, chili flakes, and cilantro. Serve with rice and enjoy!
