Roughly chop parsley.
Grate Parmesan. Then, mix yogurt, lemon zest, garlic, Parmesan cheese, and parsley in a small bowl. Season to taste with salt and pepper.
Season chicken breast with salt and pepper. Heat some vegetable oil in a grill pan over medium-high heat. Add chicken to pan and sauté for approx. 10 – 12 min. until well done and golden brown on both sides. Set aside to cool.
In the meantime, roughly grate carrot using a box grater.
Quarter olives. Halve cherry tomatoes. Cut bell pepper, onion, and cucumber into slices.
Tear lettuce into pieces. Slice chicken into strips. Spoon dressing into bottom of jar. Layer cherry tomatoes, olives, half of the lettuce, carrot, cucumber, and bell pepper. Top with the rest of lettuce and chicken. For serving, add all ingredients to a bowl and stir well to combine. Enjoy!
