Preheat the oven to 200 Celsius
Prepare the vegetables and add to an oven proof dish. Coat in sesame oil and season to taste with salt and pepper.
Roast in oven for 20 minutes, give it a stir and then drizzle with maple syrup. Return to oven for 15 minutes.
Serve dish in a bowl and add a few spoons of soft goat cheese. Garnish with chia seeds and a bit of maple syrup.
For a vegan alternative 🌱 simply substitute the goat cheese for hummus.
