- 1 tbsp Cooking oil
- 1 Onion, finely chopped
- 4 Garlic cloves
- 1 tbsp Grated ginger
In a large pot, fry onion, garlic and ginger in oil until onions are soft.
- 1 tsp Cumin
- 1 tsp coriander
- 1 tsp Turmeric
- ¼ tsp Cinnamon
- ¼ tsp cayenne pepper ( optional)
Add all the spices and cook on low heat for couple of minutes to bring out the aromatics of the spices
- 1 cup Red lentil
- 2 tbsp Fresh cilantro
- 4 cups water with a cube of vegetable broth
- 4 cups Liquid vegetable broth
Add the 4 cups of vegetable broth, lentils and cilantro and bring to boil.
Reduce heat and cook uncovered until lentil are fully cooked ( for about 20 minutes), stirring occasionally.
- 1 Small can of tomato paste
Add the entire can of tomato paste and cook for another 5 minutes
