|1 tbsp||Cooking oil|
|1||Onion, finely chopped|
|1 tbsp||Grated ginger|
|1 cup||Red lentil|
|¼ tsp||cayenne pepper ( optional)|
|1||Small can of tomato paste|
|2 tbsp||Fresh cilantro|
|4 cups||water with a cube of vegetable broth|
|4 cups||Liquid vegetable broth|
In a large pot, fry onion, garlic and ginger in oil until onions are soft.
Add all the spices and cook on low heat for couple of minutes to bring out the aromatics of the spices
Add the 4 cups of vegetable broth, lentils and cilantro and bring to boil.
Reduce heat and cook uncovered until lentil are fully cooked ( for about 20 minutes), stirring occasionally.
Add the entire can of tomato paste and cook for another 5 minutes
