"This recipe is inspired by soboro donburi, a Japanese rice bowl with minced meat and ginger. The ginger adds aroma and pungency to the beef, so I wouldn't recommend dialing down on the amount. I used oyster sauce instead of sake and mirin, you can also substitute with chili sauce like sriracha to add a bit more depth to the flavor. With ground beef and frozen peas, you will get a budget-friendly and satisfying meal in under 30 min."

    Rinse jasmine rice under running water until the water runs clear, then drain using a sieve. Add to a pot with 225 ml water, bring to a boil and then let simmer over medium-low heat for approx. 12 min. with a lid on. Then turn off the heat and let it sit on the stove.

    In the meantime, finely mince garlic and ginger. Slice the scallions into rings, save some scallion green, cut into strips for garnishing. For the sauce: in a measuring cup or small bowl, mix soy sauce, oyster sauce, light brown sugar and water. Stir to combine.

    In a big frying pan, add beef mince, heat over medium heat and break it down with a spatula. Fry for approx. 7–8 min, until the meat is brown and starts to crisp up. Add scallion whites, ginger, and garlic. Stir to combine and fry for approx. 1 min. until fragrant. Then add the frozen peas and the sauce. Fry for approx. 5 min. until the sauce is reduced and the peas are cooked. Serve over the cooked rice and garnish with scallion greens.
