Quick Basil Tomato Pasta with Fried Chicken

deep fryer, saucepan, whisk, grater
Step 1/11
- 2 chicken breasts
Tenderize the chicken breast until they are 1/3 inch think
Step 2/11
- pepper (for sprinkling)
- flour (for coating)
- 2 tsp garlic powder
- 1½ tbsp smoked paprika powder
- 1 egg
- ½ tbsp salt
- breadcrumb (for coating)
prepare the chicken for frying by seasoning with salt and pepper, dredging in flour, egg wash, and breadcrumbs

- vegetable oil (for deep frying)
- deep fryer
fry chicken in vegetable oil on medium heat
Step 4/11
set chicken aside once done frying
Step 5/11
- ½ package penne
boil the pasta, make sure you are able to preserve pasta water for later
Step 6/11
- 4 cloves garlic
- saucepan
- whisk
begin preparing sauce! add garlic and olive oil to a sauce pan and toast garlic

- 6 oz tomato paste
- ½ cup water
- 2 stalks basil
- 1 tbsp dried oregano
- 2 tbsp olive oil
add tomato paste, water, and some of the basil leaves into the pan and mix to combine

- ⅔ cup heavy cream
- grater
add heavy cream to sauce pan and stir to combine, then heat the sauce to a simmer
Step 9/11
- ½ cup Parmesan cheese
add cheese to sauce!
Step 10/11
add your pasta and a bit of reserved pasta water to the sauce and toss
Step 11/11
- 2 leaves basil (for garnish)
slice your chicken, plate your pasta, garnish with basil leaves and CONSUME!
