Take 2 medium sized potatoes. Wash them properly.
Peel the outer layer of potatoes and wash them again.
Cut the potatoes into long pieces.
Add salt and turmeric. Mix well.
Place the potato pieces in a plate and rest the place in an inclination so that the natural water inside potatoes drains slowly. Leave for 20mins.
Transfer the pieces into another clean dry plate. When the newer plate is kept at an inclination, no water should be dripping from the potatoes.
Take a frying pan. Heat it on low flame for 1min. Add oil and heat it on low flame for 3mins.
Add the potato pieces and switch to medium-high flame. Saute/mix the pieces continuously for 2mins.
Add chilli powder and garam masala. Keep mixing and sauting pieces for 10mins.
Potatoes should turn brown. They will become slightly crispy. Try to fry all sides evenly. Don't char the pieces. Immediately turn off flame if you see fumes coming out of pan. Your curry is ready! Serve hot.
