  • Step 1/7

    Pre-heat your oven to 180 C

  • Step 2/7

    • 300 g firm tofu
    • knife

    Cut your tofu blocks into 2cm cubes and pat them dry with kitchen paper. Lightly score the tofu fillets so they absorb more flavour.

  • Step 3/7

    • ½ red bell pepper
    • ½ red onion
    • 6 new potatoes
    • 6 cherry tomatoes
    • ½ lemon
    • 1 corn on the cob

    Cut the corn cobs in half, deseed and cut the red pepper into rings, peel and quarter the onion, wash and half the new potatoes, zest and juice the lemon and the cherry tomatoes.

  • Step 4/7

    Add all the ingredients to an oven-proof baking dish and give the tray a shake to even everything out.

    • ½ tbsp smoked paprika powder
    • ½ tbsp dried oregano
    • 1 tsp ground ginger
    • 1 tsp garlic powder
    • ½ tsp cayenne pepper
    • 1 tbsp maple syrup
    • 1 tbsp olive oil
    • sprigs thyme

    Add the paprika, oregano, ginger, cayenne pepper, garlic powder, maple syrup, juice and zest of the lemon, the thyme and the oil and mix thoroughly to combine so everything is coated.

  • Step 6/7

    Place the dish into the oven to roast for 45 minutes or until the potatoes are cooked. Halfway through, give everything a mix before returning to the oven.

  • Step 7/7

    I find it best to just put the tray in the middle of the table and let everyone pick the bits they want!
