Peanut Butter Chocolate Chips Banana Pancakes
whisk, bowl, nonstick pan, spatula
- ¼ cup creamy peanut butter
- 2 eggs
- 2 bananas
Mash bananas in a large bowl until smooth. Mix in the eggs and peanut butter until combined.
- 1¼ cups rolled oats
- 1 tsp stevia
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- 1 tsp baking powder
Add the rest of the ingredientes and incorporate them to the batter without over mixing them.
- ¼ cup chocolate chip
Incorporate the chocolate chips.
- nonstick pan
Heat a non-stick pan to medium and add in a teaspoon of coconut/olive oil. Add a scoop of the pancake batter. Smooth out to form an even layer. Cook for about 2-3 minutes until you start to see bubbles releasing from the top of the batter. Flip and cook until the other side is golden brown, about 1-2 minutes.
Garnish your pancakes with your favorite toppings! I used banana slices and peanut butter.
