Cut the mushrooms into slices. Dice the onions and finely chop the thyme. Roughly chop the bacon.
Heat the bacon or pancetta slowly in a cold pan so it releases its fat. Fry until it is crispy. Then set the bacon aside.
In the same pan, sauté the mushrooms, approx. 5 min. Add the onion and sauté until translucent. For the pasta, bring a pot of salted water to the boil.
Cook the pasta according to package instructions. Deglaze the mushrooms with white wine and let simmer, approx. 3 min. Add the cream and season with salt and pepper.
Grate the Parmesan cheese. Strain the pasta, reserving some of the pasta water. Add the pasta to the sauce along with two thirds of the bacon, thyme and half of the Parmesan. If necessary, add a little pasta water.
Plate the pasta and add the remaining bacon and parmesan. Enjoy! 🤤
