First, pit the plums and cut into pieces. Add to a pot with the sugar and add water until the plums are just covered with it. Allow the mixture to cook for approx. 15 - 20 min.
In the meantime, whisk the flour, milk, eggs, and salt together in a large bowl.
Heat some oil in a pan and add small portions of the batter to the pan with a ladle. Fry until golden brown on both sides.
Season the compote with cinnamon and serve together with the palatschinken.
