- 1 zucchini
- 32œ g flour
- œ tsp salt
- â tsp pepper
- 1 eggs
- 55 g panko breadcrumbs
- 32œ g Parmesan cheese

- 3 bowls
Slice the zucchinis into rounds. Set up three bowls: one with flour, salt, and pepper mixed together; one with the beaten eggs; and a third one with the panko breadcrumbs and grated parmesan combined.
Step 2/3
Coat each zucchini slice first in the flour mixture (tap off excess), then dip into the beaten eggs, and finally press firmly into the panko-parmesan mix until fully coated.

- 250 g vegetable oil
- frying pan
- slotted spoon
- paper towels
Heat the vegetable oil in a deep pan. Fry the breaded zucchini slices in batches for a few minutes per side until they are golden brown and crispy. Drain on paper towels before serving.
