"This year’s sliders for your Super Bowl party are not with your regular patties. Try these kofte sliders which are like the Inegöl köfte, made with baking soda to capture all the good, fatty moisture in them. It’s a very special type of kofta. The texture will be a bit gummy, and the bite into it with the brioche; heavenly. You’ll be letting the tomato sauce drizzle over these köfte pieces in your burger, resting on a garlicky yogurt sauce topped with good old parsley. Think about all the juicy and creamy things that make a burger likable, but for an interesting twist of flavor. No regrets, only köfte sliders (burgers)!"

    Start with peeling and grating onion. Then place ground beef in a bowl. Add baking soda, salt, pepper, ground cumin, and grated onion. Once thoroughly mixed, cover tightly with plastic wrap and cool in the fridge for approx. 2 hrs., or more. Once you take beef out, mix one more time before placing between two parchment papers. Roll out beef mix between the papers and cut into equal sized pieces.

    Heat some oil on a frying pan. Slowly place kofta pieces on the hot pan. Make sure they are covered in oil. Flip them each every few seconds until they turn golden brown. Meanwhile, bake sliced burger buns for approx. 5 min. in the oven on 180°C/356°F convection. The goal is to only heat them up. Grate garlic. In a bowl, mix yogurt and half of garlic for the base sauce. In a small pot melt butter, tomato paste, sweet paprika powder, chili flakes and other half of garlic until all mixed for the second sauce.

Then assemble with bottom bun, yogurt sauce, 2–3 kofta pieces, pinch of salt, buttery tomato sauce, chopped parsley, and finally top bun. Press lightly and repeat for all buns. Serve immediately or the butter sauce will harden!
