  • Step 1/4

    • 1⅓ red beets
    • 1⅓ potatoes
    • 1⅔ carrots

    In a large pot,bring water to a boil and carefully add the whole red beets.Cook on medium high heat for 20-30minutes.To the same pot,add in the potatoes and cook for 10 minutes.Finally,add the carrots and cook for the last 10-15 minutes.DON’T peel any of the vegetables before cooking.

    Drain all of the vegetables and leave to cool for at least 30 minutes.

    • red onion

    Peel the cooked vegetables and the onion.Slice the beets and potatoes into circles,half moons or cubes.Cut the carrots into circles with an angle.Thinly slice onions.

  • Step 4/4

    • lemon
    • olive oil
    • salt

    Sprinkle with salt generously (to your liking),drizzle with some olive oil and add the juice of one or two small lemons.Mix well and serve right away or let rest in the fridge for two hours.
