Katelyn's banana muffins
Ingredients
Step 1/8
Preheat oven to 325°F/163°C and lightly grease 6-9 muffin tins or use liners.
Step 2/8
- 41⅔ g flour
- ⅛ tsp baking soda
- ⅓ pinch salt
- ⅓ tsp cinnamon
- ⅛ tsp nutmeg
In large bowl, combine flour, baking soda, salt, cinnamon, and nutmeg.
Step 3/8
- 19 g butter (soft)
- 33⅓ g brown sugar
In separate bowl, cream butter and sugar.
Step 4/8
- ⅓ egg
- 1 bananas (ripe)
- ¼ tsp vanilla extract
Then mix in eggs, vanilla, and mashed bananas until well blended.
Step 5/8
Stir wet mixture into dry mixture until just moistened.
Step 6/8
Spoon into muffin tins. If desired, sprinkle with brown sugar (or wait til after baked and do the butter/cinnamon/sugar topping).
Step 7/8
Bake for 17-22 minutes, until toothpick comes out clean.
Step 8/8
- butter (melted, optional)
- cinnamon sugar (optional)
Drizzle with melted butter and sprinkle with cinnamon sugar.
