Indian Scrambled Eggs

- 4 spring onion
- 1 green chilli
- 2 cloves garlic
- 30 g fresh coriander
- 2 tomatoes

Finely chop the spring onions, chilli, garlic, tomatoes and coriander.

- 6 eggs
- 1 tsp garam masala
- 1 tsp ground turmeric
Lightly beat the eggs together with the spices.

Heat a frying pan on medium heat and preheat the grill. Add the chopped onion to the pan for a few minutes until starting to soften. Add the garlic, chilli and tomato and fry for another minute.

Add the beaten egg mix and keep stirring gently with a rubber spatula until the egg is cooked through. Meanwhile put the naan breads under the grill to toast.

Serve immediately on top of the toasted naan with fresh coriander and a dollop of mango chutney on the side.
